Chicken Mediterranean Bowl

Why I love this bowl:
– protein filled
– skin nourishing
– gut nourishing

Ingredients:

  • chicken breast
  • plain yogurt
  • chicken kabab spices
  • chicken shawarma spices
  • salt & pepper
  • pickled red onion
  • pickles
  • mushroom
  • zucchini
  • parsley
  • onion
  • butter
  • EVOO
  • organic jasmine rice
  • unrefined cold pressed extra virgin coconut oil
  • hummus
  • garlic

Prep:

Wash the chicken in water and salt and vinegar or water and baking soda. Wash veggies in water and baking soda.
Cut up chicken breast, parsley, mushrooms and zuchinni.
Chop up garlic
Wash and rinse the rice.
Soak the rice for 20mins or so.

Recipe:

  1. Marinate chicken in yogurt (enough to just cover the pieces) and spices. Let it sit for 20mins.
  2. In a pan add butter and/or EVOO to sautee onion, mushroom, zucchini, garlic, and chicken. Salt and pepper those veggies!
  3. In a pot cook your rice with water and coconut oil. I put around 1.5 tablespoons for a serving of rice for 4? I kind of eyeball it! It depends on your preferance. Add a good amount of salt. Stir. And let cook.
  4. In a bowl add your rice, chicken & veggies
  5. Top with pickled red onions, pickles, parsley and hummus.
