When I say these were delicious… I mean I was thinking of them ALL day after I finished them. TOO GOOD. These are such great grab and go breakfasts. I especially love making these when it is that time of the month because the chocolate cravings can get in the way when I am trying to lose weight or watch sugar intake, etc. and what better way to balance than to make healthy chocolate muffins. These are high in protein which are great way to keep this muffin balanced. They’re made of oats which I love because this muffin is then not a simple sugar that is going to make me hungrier after eating but rather full and satisfied. Along with healthy fats + proteins to make it balanced and keep my sugar cravings at bay.
The macros for the ENTIRE batch is 49g carbs, 13g fat, 46g protein. This recipe will make 5 muffins!
RECIPE:
50g rolled oats – blend them in the blender to make flour
In a bowl:
- oat flour
- 1 scoop chocolate protein powder
- 1 tsp baking powder
- 2 tbsp cacao powder
- sprinkle salt
- 1 egg
- 125mL of milk (your pick of milk, I used 1% here because that is all I had)
- Mix mix mix!
Bake:
350 degrees F, for 15-20 mins.
Let sit outside for 5-10mins.
Optional toppings:
- choco chips (obviously)
- dark chocolate chunks
- vanilla yogurt + chocolate shavings
- Nuts
